How To Prepare Red Lentil Curry

  • 2 cups red lentils
  • 1 large onion diced
  • 1 tbsp. vegetable oil
  • 2 tbsp. curry paste
  • 1 tbsp. curry powder
  • 1 tsp turmeric powder
  • 1 tsp. ground cumin
  • 1 tsp chilli powder
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp minced garlic
  • 1 tsp fresh ginger minced
  • 1 can tomato puree

Method:

In cold water wash the lentils until the water is clear. Put lentils in a pot and cover with water, then bring to a boil, reduce heat cover the pot and let it simmer for about 10 or 15 minutes, keep adding water as needed. Once done drain and leave aside.

Next, heat the vegetable oil in a skillet, add the onions and fry to caramelise. Then in a bowl mix the turmeric, curry paste, ginger, curry powder, garlic, chili, cumin, salt and sugar. Mix it into the onions and stir on a high heat until aromas are released. Then stir in the tomato puree, mix well and add it all to the boiled dhal/lentils and give it a good mix.

Serve hot on a bed of soft fluffy rice. Top up your glass of wine and enjoy!
